Meal Planning #3

I think I am just going to move this blog to being posted on Monday mornings since for some reason I can't seem to get it out on Thursday recently.  How was your last two weeks? How is your meal planning going? I am also changing this to just just showcase one week at a time to simplify shopping on my part.

We are doing good here in my house.  I do now have a toddler who has decided that the only things she wants to eat are tortillas and cheese or hot dogs (I thought they didn't do that until they were two), which has made things a bit more on the challenging side.

Meal Planning #2

Ok I know this post is about 4 days late, I apologize.  I have been slacking off in my blog.  I have a whole bunch of blogs half done that I really need to add pictures too (the worst part is I have the pics, they are edited, they just aren't added into the posts yet).

Anyway - how's your meal planning going?  Our first week went great! I did realize when I went to the store that first Sunday that I was not going to be able to buy all my produce and have it keep for the two weeks, so I modified my grocery list and left off the produce for week two and picked that up the following Sunday. 

Week two didn't go as well as week one for us.  We ended up with some unplanned out of town guests at my parent's house on Thursday and Friday we had a party to go to that I had forgotten about.  So you'll see our Thursday and Friday meals on this week's menu. Let's get down to the meals!

Menu Planning

I have never been one of those incredibly organized, my-house-is-perfect, prim and proper moms.  I want to be, I strive to be, but let's face it, it isn't going to happen.  I try to be as organized and neat as is possible with 2 kiddos and working a full time + job, but sometimes housework falls by the wayside or dinner is peanut butter and jelly sandwiches.  I know my kids aren't really suffering for it and they would rather blow bubbles and play peek-a-boo with me anyway than worry about cooking a 5 course meal, but something inside me wants to be that organized (if you ask the Man it's my OCD).

Peaches...

I am about to have an abundance of peaches.  Every year my parents order peaches from a local lady who sells them for family that runs an orchard in Palisade, Colorado.  Every year my parents go on vacation around labor day. Every year the peaches they order come in while they are gone and I have to pick them up and do something with them (OK maybe I am exaggerating a little bit, but it feels like it).

Cinco De Mayo - What's for dinner???

So now you have all your party decor made up for the fiesta tonight, but what are you going to serve? Personally I love the taste of fresh squeezed limes, so that has to be included on anything Mexican I make. I was thinking of hitting up Chubby's and picking up some tacos for the family, but all these recipes and photos have me thinking I'm making my own steak tacos tonight.  Here's some inspiration for the rest of you.

Valentine's Day Treats - You Bake it Edition

I'm not a big fan of eating baked goods, however I love to bake (strange, I know).  I love decorating cupcakes, I love trying new recipes, I love all of it - except for the eating part.  The Man often tells me he's going to get a job where I don't have to work so I can stay home with my babies and bake him stuff all day.  It amuses me when he says this and then I remind him that I would be bored and spend money on fabric all the time.  It isn't that I would get bored of my children and spending time with them, but I am one of those people who has to always be doing something, and Squeaky takes naps.  Since I can't stay home and bake all day to give you my own awesome recipes, I hope these will substitute well enough to make you drool.


These heart shaped cinnamon rolls come from Pinch My Salt (love the name). Wouldn't they make an amazing breakfast for your loves on Valentine's Day?



Valentine's Confetti from the This Blessed Nest would be such a cute snack for a class party and could even be adapted for other holidays as well, just change the M&M colors!



Cake Balls!!! They are bite sized pieces of heaven - plus you can't feel guilty if you eat a few, they are just little balls.  The pic comes from Creative Momma's but she used this tutorial.


These are Scone sweet scones from Prudent Baby.  If you haven't checked these momma's out yet, they have an amazing blog! I love their ideas.



And who can resist a cake with a heart in the center? This heart cake comes from i am baker. This blog has some amazing tutorials on how to put almost anything you can imagine into the center of a cake (there's even a bat from halloween) .
